Spicy Corn on the Cob Recipe

We all love a good corn on the cob or a “mielie” as we like to call the here in South Africa.

This recipe is so easy to make and will impress every one who is lucky enough to taste it.

INGREDIENTS:

4 Ears of corn

1/2 Cup of mayonnaise

1 tsp of BBQ or Braai spice

1 tsp of paprika

1 tsp of curry powder

1 tbs of Tabasco (if you like a little heat)

1 tsp of Garlic salt

1/4 cup of cooking oil

1 tbs of butter

1 tbs of salt

the juice of 1/2 a lemon

Fresh coriander for the garnish

METHOD:

Bring water in a large pot up to a boil and ad the salt along with the corn. Put the lid back on and start heating your grill or grilling pan.

Ad the BBQ spice, paprika, curry powder, Tabasco and lemon juice to the mayonnaise and mix.

Cook the corn for about 10 – 15 mins and remove from the water. In the mean time add the oil and butter into cup and heat in the microwave so the butter melts into the oil. (this will take less than 30 seconds)

Paint the butter and oil mix onto the corn and place on the hot grill. Grill the corn until you start to see charring marks of on the corn. This should take about 3 – 5 mins. You can continuously paint some of the oil mixture on while it is grilling.

Serve hot with the spicy mayonnaise and garnish with fresh coriander.
